  • Plain Puris
  • Grated Carrots
  • Onions 3-4

Preparing Pani

  1. In a vessel, add water, crushed garlic cloves around 5-6, crushed ginger small piece, coriander leaves, three slit green chilies.
  2. After it boils, turn off the heat, use a strainer, and pour the water to a container, add salt and lemon juice when it is hot.

This changes its color as it cools down.

You can use the chilies, ginger, and other ingredients from this for green masala.

Preparing Green Masala (peas)

  1. Take half of the boiled peas, grind it to a fine paste along with the green chilies, ginger, garlic and coriander leaves you boiled in water.
  2. Add oil in a pan, add this paste, add water, add the rest of peas, add a little mashed potato.
  3. Add salt, chaat masala, and black salt. Bring it to a boil and turn the heat off.

Preparing Brown Masala

  1. Heat oil in a pan, add chopped onions, garlic cloves, and slit green chilies.
  2. Saute it till onions change the color. Cool this mixture down.
  3. Now in a mixer jar, add diced tomatoes, cloves, peppercorns, cinnamon, ginger, coriander leaves, and the mixture.

Grind this to a fine paste.

Step 4 - Heat oil in a pan, add this mixture. Add sufficient water to it, add salt, chaat masala, garam masala, mashed potato, and some black salt. Bring it to a boil and turn the heat off.

Now what?

Take a puri, break it, add masalas, grated carrots, chopped onions, chopped coriander, and finally some Pani.
